Summer Eats

Over the summer, students living on Caltech campus only get $360 of board, enough to buy around one meal a day at Chandler, our dining hall. So, that means Caltech students have time to perfect the art of cooking (or, you know, the art of ordering in and using the microwave). I love cooking, so I took this opportunity to learn how to make some of my favorite dishes.

Here are some highlights of what I’ve done so far: 4th of July Pie: I decided to make a red, white, and blue blueberry and strawberry pie to get myself in a patriotic spirit. Making pie is one of my favorite things. It is generally super easy to do, but ends up looking super fancy. For this one, I attempted to make a lattice crust with some flowers on it. While the lattice ended up looking great, I quickly learned how “blobular” the delicate flour petals I created out of pie crust became when they hit the heat. Well, it still tasted great!

Ricotta Gnocchi-Italian Delights: This is one of my all-time favorite foods. What could possibly be better than pasta made out of cheese topped with a tangy marinara sauce and more cheese!? It also appears to be a super complex dish, but only takes around an hour to make, including the time it takes to make homemade sauce. My friends make fun of me because, as a girl with Italian heritage, I always make sure I buy real parmesan cheese, not the pre-grated kind. While some may not notice the difference, the real stuff is much more flavorful and key to making the pasta taste great.

As I mentioned in my last post, I grabbed some key limes on the way back from the Grand Canyon. They were on sale for a dollar a pound and I went for it. It turns out that making key lime pie is super easy. All you have to do is combine condensed milk, sour cream, key lime juice, and zest, put it in a graham cracker crust, bake for 5-8 minutes, and chill for at least an hour. It tasted amazing. I still have enough key lime juice to make another pie, which is most definitely what I will be doing this weekend!
